THE UNIQUE PROPERTIES OF MANUKA HONEY: the "IAA" measures the activity of Manuka honey. The higher the index, the greater the concentration of methylglyoxal, the more active the honey. Common honeys generally show a time-limited activity due to the degradation of hydrogen peroxide (oxygenated water) by the body. However, New Zealand scientist Peter Molan discovered an additional activity in Manuka honey called “Non-Peroxide Activity” (NPA). This term NPA has been translated by the IAA index which is equivalent. THE RARITY OF MANUKA HONEY: used in traditional medicine for centuries, Manuka, or Leptospermum scoparium, is a shrub of the Myrtaceae family renowned for its exceptional properties. It grows naturally and wild in the pristine lands of New Zealand under harsh climatic conditions. Its short flowering period, between 4 to 6 weeks, makes its honey both rare and unique. THE COMPOSITION OF MANUKA HONEY: sugar of natural origin, a little water and hundreds of substances from plants and transformed by bees: this is what all honeys contain. What makes Active Manuka honey so unique is its high content of methylglyoxal (MGO), a compound derived from the nectar of the flowers of the southern plant from which it comes.
